Maybe proper security and monitoring on the server all these documents are stored on? Monitoring software on all company-owned laptops, so you know if someone's copying from, rather than opening from the server.
Or, if you're really paranoid, just make everybody use some kind of remote desktop solution, so there's nothing on anybody's local drive to open.
